Homemade Shrimp Linguini Alfredo

Ingredients:


1 16oz package of linguine pasta

1/4 cup extra virgin olive oil

2 "pats" of butter

1/2 cup minced onion

6-8 tablespoons chopped garlic (according to how much garlic you like)

1/4 cup chopped parsley

1 lb to 1 1/2lbs medium size fresh shrimp (or substitute 2 cups chunked chicken for a cheaper option)

1/3 cup white wine

2 cups half & half

handful of freshly grated parmesan cheese, plus 1/4 cup for top of dish

salt and pepper to taste


Directions


Boil water and add salt to flavor the pasta. Add in the pasta and a little oil (to keep it from sticking together). Cook pasta until al'dente about (8 minutes).


In a skillet, add the olive oil, pats of butter, onion, shrimp and garlic (last). Saute on the onion on medium heat and then add the shrimp and garlic. Add the white wine and finish cooking the shrimp until it is pink in color. Be careful not to burn the garlic! Add the half & half to the shrimp mixture. Stir constantly until the sauce starts to thicken. Add in the parmesan cheese and salt & pepper to taste. Cook the sauce until the cheese is melted. The sauce will thicken upon standing.


Drain the pasta and put it in a semi-deep serving dish. Pour the shrimp and alfredo sauce over the pasta and toss together. Add the extra 1/4 cup parm cheese on top and then add the chopped parsley.


You are done! You just made your very own, DELICIOUS, shrimp linguine alfredo. So, save your money going out to expensive restaurants, stay home and cook this restuarant quality pasta dish. Serve with come crunchy bread and a side salad!
